Takashi Otani, born in Peru of Japanese parents, was a nikkei chef who stamped his own personality on Peruvian cuisine. His daughter Doris now proudly continues her father’s tradition at the family restaurant ‘El Encuentro de Otani’. These delicate fried seafood morsels, seasoned with just a hint of salt and garlic are simplicity itself-the hallmark of today’s nikkei cuisine.
