Rosita Yimura is a nisei lady who has long been a prime force in the creation of nikkei food in Peru. Her restaurant is on the ground floor of her home down an intricate set of twisting streets. Finding this house is, as Michelin would say, worth the trip. The sauces and crabmeat filling in Yimura’s recipe for crisp rolls combine to produce a very special flavor not found outside of Peru.
