This large white lima or butter bean salad is simple and easy to make. It’s better made with fresh white lima or butter beans, if you can find them, popped from their skins. If you use dried beans they will need soaking overnight and cooking for a longer time.

Ingredients

  • 1 lb (½ kg) fresh large white lima (butter) beans
  • 1 large onion

Method

Preparation

Rinse beans and place in a large pot with plenty of water. Bring to the boil and simmer, over medium heat, for about 25 minutes, checking the water level from time to time. The beans should be tender but not too soft. Drain and put aside to cool. Peel if desired.

In a small bowl, combine onion slices with ají amarillo, lime juice, olive oil, salt and pepper.
