This is a recipe that I have thrown together to help illustrate the strong bond between Italy and Peru. In the 19th and early 20th centuries many thousands of Italian immigrants made Peru their home. They thrived here and became great producers of pasta. In 1878, Lima already counted 12 pasta factories. All of them belonged to Italian immigrants.
