This is Peru’s own version of bean salad and comes to us from the beautiful southern highland city of Arequipa. The color and flavor of fresh fava or broad beans is teamed with fresh corn kernels and juicy olives. Velvety fresh white cheese completes the dish and makes it an ideal candidate for a light luncheon or a first course at supper.
