Ceviche Clásico

Lucho Cordero of ‘Kapallaq’ invented this ceviche and named it for the annual clash of Peru’s two top soccer teams: ‘El Clásico’ between Alianza Lima and Universitario de Deportes. The flavors and colors are strong and vibrant as is the game.
