Pepián is another ancient Peruvian preparation which is still eaten regularly in its original form. As with many other dishes, each region or town has its favorite way of preparing it. A creamy, more liquid form of the classic humita or tamale, it can be made with rice or corn and teamed with duck, turkey or any kind of meat that rings your palate’s bells.
