This typical dessert from the viceroyalty takes a little practice to make. The traditional spiral shaped iron batter molds are made especially for the convents and pastry shops in Lima where these lighter than air ‘meditations’ are produced. Any shape can be used as long as it is heat resistant.

  • 1 cup milk
  • 1 cup all purpose flour

Preparation

Blend the first three ingredients together to make a smooth batter. Heat the oil in a large, deep saucepan. Heat the iron batter mold in the hot oil and then dip into the batter. Cover with a thin film of the batter, leaving a ½ cm rim clear at the top of the mold. This is because during deep frying the batter will bubble up a little.
