A friend of mine once told me ‘if you ever meet someone who doesn’t like chocolate there might be something seriously wrong with him’. The recipe for this delicious chilled chocolate turrón is from Lisette Hansa. Serve it with thick chocolate fudge sauce and you have a chocolate lover’s double delight.

  • 2 cups vanilla wafers or cookies (broken into small pieces)

Preparation

Melt butter in the top of a double boiler over low heat. Remove from the heat and mix in sifted cocoa powder. In a large bowl, beat sugar and eggs together until the mixture forms soft peaks.

Gently fold butter and cocoa mixture into the beaten eggs with a spatula. Mix in raisins and pecans. (Reserve some chopped pecans for decoration.) Add the broken wafers and mi
