Method

Preparation - Mazamorra Morada

Soak the dried fruit overnight. Peel the quince, pineapple and apple. In a large pan bring to the boil the purple corn and the fruit peels with the cinnamon and cloves in about 3 liters of water.

Boil for about 15 minutes or until the liquid has taken on a deep purple color. Strain liquid and put aside a small amount to cool. Return the corn to t
