Light, beautiful, and classic, this appetizer has always been at the top of the list of my summer repertoire. The creaminess of the avocado, the silkiness of the colorful sauce, and the freshly caught and lightly cooked shrimp, all contribute to the pleasurable experience of enjoying this easy to make dish.

1 pound 4 - Salt and pepper
Method
- Wash the shrimp under cold running water. Peel and discard the peels.
- Make a cut along the back of the shrimp to discard the veins by pulling them out with the tip of a knife. Wash again.
- Bring a pan of water with salt to a boil over medium heat. Add the shrimp (including the whole ones), turn the heat to medium low, and simmer for 3 minutes or unti
