Jacq: Peas and fresh mint are a match made in heaven! I first had the combination at a wedding in the English countryside. When I started experimenting with the recipe at home, I knew I had to give it a Californian touch with a little creamy avocado thrown in. The coconut milk yogurt and fresh herb topping make it extra luscious. Serve it with our Spring Salad with Green Goddess Dressing for a light and refreshing meal.
