Jacq: Surprisingly, one of the best things I ever ate in Mexico was beans on toast. The chef who made them was kind enough to let me in on a couple of secret ingredients—cocoa butter and beer! The cocoa butter lends a wonderful complexity while beer adds a subtle earthy flavor and a touch of acidity. I’ve thrown in tempeh bacon for a meaty smokiness.
