This pie has a deep, dark chocolate filling and is rich without being too sweet. It can be topped with Vanilla Whipped Cream as shown here, or the Vanilla Sea Salt Meringue, which has a subtle saltiness and silky texture that complements the chocolate beautifully.
In a medium saucepan, sift the sugar, cocoa, cornstarch, and salt. Whisk in the eggs, egg yolk, and half of the cream. Gradually whisk in the remaining cream, then whisk in the milk. Cook over medium heat, whisking constantly, until you feel the pudding start to thicken on the bottom of the pan, about 10 minutes. Reduce the heat to low and trade your whisk for a rubber spatula.
