Meyer Lemon Sunshine Pie

This pie is similar to a chess pie in that it’s made with a good deal of butter, dairy, and sugar. However, the final result has a much more potent punch of lemon than a lemon chess pie. Why? Because whole Meyer lemons—peel and all—are pulverized into the filling. The result is simultaneously buttery, tangy, sweet, and zesty. Don’t attempt to substitute the Meyer lemons with regular lemons, because the result would be overwhelmingly bitter. I like to balance the tartness of this pie with a
