Cajeta is a Mexican caramel made from goat milk. It’s similar to dulce de leche, but thanks to the wider range of amino acids present in goat milk, it’s more interesting and complex. I admit it’s not a traditional pie topping or sundae component, but it’s excellent drizzled over pie and ice cream nonetheless—I love it on apple, sweet potato, and pecan pies.
