These cherries can be used for more than just Nesselrode Pies; try them in cocktails and sundaes, or even make them into a confection by dipping them in melted dark chocolate. The extra syrup can be used in homemade sodas or in a champagne cocktail.

Method

In a large saucepan, combine the cherries, granulated sugar, and rum. Cook over medium-low heat for 45 minutes, stirring every 5 minutes, until the cherries are tender, and the syrup is thin and have the color of red wine. Don’t let the mixture boil, but if it does, turn down the heat.
