This is a custard-style ice cream that churns up rich and smooth. Simmering the vanilla bean pod in the custard imparts it with a distinct vanilla flavor.
Place a metal bowl in the sink or in a larger bowl filled with ice water.
In a medium saucepan, whisk together the sugar and egg yolks until smooth. Gradually whisk in the cream, then whisk in the milk.
Scrape the vanilla bean and add the contents and the pod to the saucepan, along with the salt.
