This crust is a very nice surprise for either a sweet or savory pie. Be sure to use a good-quality aromatic, aged hard cheese that you can grate very fine; otherwise, the crust will be gritty. I particularly like pecorino Romano or Parmesan, but whatever you choose, avoid those with a high moisture content because they will make the crust oily and chewy.
