Inca salad

Although Peruvian in origin, there is something Abigail’s Party-tastic about this salad – particularly if you serve it in a glass salad dish and layer it like Zippy’s rainbow. I like to drag it from the seventies to a present, rough-hewn chic by piling it rustically on a big wooden platter and letting the gorgeous kaleidoscope tumble where it will.
