Rice raita is a very common salve to the delicate Indian stomach. It is comfort food, a panacea. Yogurt is seen as the ultimate antibiotic and rice as the god of small intestines. Okay, so that’s where this dish sits medicinally but it also tastes amazing – refreshing and zingy served alongside curries and breads.

Ingredients

  • 200 g/7 oz/ cups long-grain brown or basmati rice, rinsed and drained

Method

Put the rice in a large saucepan and add 500 ml/17 fl oz/2 cups water to cover and bring to the boil. Reduce to
