The tomato pie is the American version of the Neapolitan marinara pizza. If you go to New Haven (if you haven’t, go), you’re getting a tomato pie. Then there’s the New Jersey tomato pie, one of the oldest pizzeria traditions in America (De Lorenzo’s Tomato Pies in Robbinsville, New Jersey, is my go-to). The tomato pie is making a comeback, and it’s something that lets great ingredients shine. So much pizza is laden with mozzarella, so let’s sing the praises of a lightly cheesed pie.
