Tomatillo sauce is a staple of Mexican cuisine and synonymous with enchiladas, but it’s great with eggs, breakfast tacos, and chilaquiles for breakfast (or any time of day), or with sour cream on potatoes that roasted in the oven. You can use it on anything, including ... pizza.

Ingredients

  • 8 green tomatillos, trimmed and halved
  • 1 yellow onion, halved
  • 2 jalapeños, halved

Method

  1. Set the broiler to high. Oil a baking sheet.
  2. Arrange the tomatillos, onion, and jalapeño halves and whole poblano pepper on the oiled baking sheet. Sprinkle with sea salt and broil for 5 to 8 minutes, until the skins begin to blacken. Remove from the oven.
  3. Immediately remove the poblano and place it in a covered container to sweat for 2 to 5 minutes (
