I developed this recipe over time. Occasionally I’d work with another Texan and we’d trade notes. I’ve settled on sour cream, chives, and garlic as the main characters. It’s important to never let dill take over. The sour cream lends coolness—you get a creamy, cool, slightly tangy texture that the herbs float around in. It’s best after sitting in the fridge overnight.
