I bought a bunch of spices, salts, and seasonings from this amazing chile store in Kyoto while I was on an R&D trip in Japan to check out Tokyo-style pizza. The spices were beautifully packaged and tasted amazing. Yuzu kosho, a fermented Japanese chile paste, is especially fun. It’s salty and spicy, with a fruity fermented flavor that pairs with anything and is especially great in shrimp marinade.
