Method

In a large bowl, stir together both flours and the water just until combined. Cover and set aside for 30 minutes. Using your hands, mix in the yeast and then the salt. Transfer the dough to a lightly floured surface and knead until the dough is soft and springy, about 7 minutes. (Alternatively, mix and knead the dough in the bowl of a stand mixer using the dough hook.)
