A healthier, slightly more toothsome alternative to the classic, this dough could be used in place of any recipe calling for the NY Style Pizza Dough.
In a large bowl, stir together both flours and the water just until combined. Cover and set aside for 30 minutes. Using your hands, mix in the yeast and then the salt. Transfer the dough to a lightly floured surface and knead until the dough is soft and springy, about 7 minutes. (Alternatively, mix and knead the dough in the bowl of a stand mixer using the dough hook.)
