Gorgonzola makes my top five favorite cheeses. When entertaining guests during the cooler months of the year, I get a large piece of gorgonzola and place it in a heatproof dish, warm it until it just starts to melt, then drizzle it with truffle honey. I serve it with toasted sourdough bread to help scoop up the runny cheese and honey. I have adapted this way of serving cheese into this wonderful pizza to be more of a meal than a dessert.
