Meat in Argentina is generally of such quality that it doesn’t need this sauce, which is nonetheless to be found everywhere.


  • flat leaf parsley
  • garlic
  • white wine vinegar
  • olive oil


Trim the parsley and process with the garlic. Add the olive oil gradually. A splash of vinegar is all that’s required. Most recipes include oregano. I dislike the stuff so give it a miss.
