Yes, Colombians eat guacamole, and yes, they make it with ripe avocados and cilantro. But they also add mayonnaise—heresy in other parts of Latin America—and they normally serve the guacamole as a sauce, not a dip.

Ingredients

  • 1 ripe avocado
  • 1 serrano or other chile pepper, stemmed, seeded, and minced
  • ¼ cup

Method

Peel and seed the avocado. Cut the avocado into 1-inch dice and place it in a food processor along with the serrano pepper, cilantro, onion, mayonnaise, and salt. Run the machine in short bursts until a smooth puree forms. Add the lime juice and enough water (2 to 4 tablespoons) to obtain a thick but pourable sauce. Taste for seasoning, adding more salt and/or lime juice as necessary.
