The flavors of this sauce—sweet, spicy, a little tart—will be recognizable to any North American barbecue buff. But Uruguayans get there a different way, using plum preserves and dried plums for sweetness (instead of the usual North American ketchup), mustard for spice, and red wine for acidity.
