Here’s a version of the Puerto Rican Pork Shoulder made with pork chops and quick enough to be prepared on a weeknight. There are several options for the pork chops—thick rib chops, pork “porterhouses” (loin chops with both loin and tenderloin attached by a T-bone), and even country-style ribs, which are elongated chops cut from the pork shoulder.
