As many of you may know, when I’m not traveling Planet Barbecue, I spend much of the year on Martha’s Vineyard. Of course we grill, and naturally, the first thing to hit the embers is the local seafood. For most people lobster means a crustacean boiled in seawater. Boiling helps keep the meat moist, but grilling roasts the shells, and gives the meat a complex flavor you simply can’t achieve with a pot of water.
