This Colombian side dish is so simple I’m almost embarrassed to include the recipe. Almost. It’s just that the bananas become so sweet and smoky—and the preparation is so quintessentially Colombian—that I would be remiss to leave them out. These bananas accompany grilled meats at Bogotá’s landmark chophouse, Lomos, but they’d also make a terrific dessert, especially if accompanied by the rum-flavored whipped cream here.
