I’ve drawn inspiration for these toasts from a popular Gujarāti snack called lilvā kachori, which consists of a sweet and spicy fresh lilvā (pigeon pea) filling encased in crisp, bite-size pastry. The original version is quite labor-intensive since it involves making individual kachori one at a time. To simplify the process, I developed a similar filling made from green peas and paired it with toast.
