A bellini is ‘simply’ crushed-down peaches topped with prosecco. The fact that you can mix peach pulp with sparkling wine and call it a cocktail with its own name must be one of the best things about life — something straight out of that scene in Fantasia, with Bacchus drinking and making wine with satyrs and centaurs and centaurettes. In reality, however, the cocktail was famously made in Henry’s Bar in Venice by Giuseppe Cipriani in 1948.

And yet it reminds me of those time
