Polenta is yellow or white coarse maize flour used as a staple in Italy and, curiously, in Eritrea where the cooking is heavily influenced by its Italian period of occupation. Buy the easy-to-prepare yellow variety and make it according to the packet instructions. White polenta is too soft for this dish.

Method

Preheat the oven to 220°C/425°F/gas mark 7. Butter a large shallow oven dish, then cut your polenta into strips, and arrange some of these over the base. Cover this layer with bits of ham, some of the grated cheese, dabs of butter and some beaten egg.
