My friend April gives me jars of delicious pickled red cabbage which is particularly good with this dish but you won’t have that benefit so, unless you have pickled red cabbage, use fresh. To save you the trouble of peeling chestnuts, or if it’s the time of the year when there aren’t fresh chestnuts, you can buy very good ones in vacuum packs or tins.
