Crisp rolls, or skorpor, as they are called in Scandinavia, are a delicious and hearty snack eaten plain, dipped in coffee or tea, or topped with butter, cheese, or marmalade. They are a type of cracker and should not be mistaken for dried leftover rolls. The characteristic fragile and crunchy texture, which is the trademark of a real crisp roll, is obtained only by making sure the dough as been prepared and proofed properly.
