Like apple pie, lemon meringue pie is an American favorite and has been since the nineteenth century. The sweet, billowy meringue topping perfectly offsets the slightly tart lemon base, which seems by far to be the preferred portion of the pie, judging by the meringue often left on the dessert plate.
