Florentina Surprise pastries contain a medley of flavors—chocolate, nuts, rum, and caramelized sugar—that blend together well, and these pastries give my students an opportunity to work with a broad range of techniques in their preparation. The surprise part of the name refers to the ganache, which is hidden underneath the Florentina cookie. The name is also fitting when, as happens from time to time, someone forgets to include the filling, leaving the inside hollow.



  1. Roll out the short dough to ⅛ inch (3 mm) thick. Cut out 45 cookies, 2 inches (5 cm) in diameter, using a plain cutter. Cover the dough scraps and reserve for another use. Bake the cookies at 375°F(190°C) for about 10 minutes or until light brown. Set aside to cool.
  2. Draw 45 circles, 2 inches (5 cm) in diameter, on baking papers, using a cookie cutter as a guide. Invert the papers and place them on sheet pans. Divide the Florentina batter among the circles, spread out, bake, and trim the cookies according to the instructions.
  3. Flavor the buttercream with the hazelnut paste; place in a pastry bag with a No. 5 (10-mm) plain tip. Pipe a ring of buttercream on each of the short dough cookies inside the edge.
  4. Flavor the ganache with rum. Place it in a pastry bag with a No. 4 (8-mm) plain tip. Pipe a small mound of ganache inside the buttercream rings. Refrigerate until the buttercream is firm.
  5. Holding a cookie upside-down, dip the buttercream, ganache, and the top part of the short dough cookie into melted coating chocolate. Shake off as much excess chocolate as possible by moving the cookie up and down a few times over the bowl so that the chocolate does not run out around the pastries as it hardens. Place the cookies on paper-lined sheet pans.
  6. Before the chocolate hardens, place a Florentina on top of each pastry and press gently to make it level. Do not refrigerate Florentina Surprise pastries.
