This is a variation of a recipe I have had in my files for many years called Pancakes Johann Strauss. In the original, the soufflé pancakes are cooked on both sides, then sandwiched together with orange segments and served with orange sauce.
If you do not have a small Swedish pancakes pan, or plättiron, it is best to use a 6-inch (15-cm) crepe pan instead and portion only one pancake per serving (two sandwiched together). In this case, cut the pancake into four wedges before putting
