This recipe is a low-fat variation that uses yogurt and ricotta cheese in place of cream and fruit, and adds fruit pulp to improve the texture. In the traditional Philadelphia-style ice cream recipe, fruit pulp is listed as an option to add flavor and improve texture however the bona fide version of this old favorite consisted simply of sweetened cream flavored with vanilla.
