With such a variety of fresh fruit available from all over the world today, I am opposed to using fruit from a can just because a particular fruit is out of season. However, apricots are one of the few exceptions. Their season is too short to take full advantage of this delicious fruit, and because apricot sauce complements so many desserts, it is welcome all year round.
