Procedure
- Roll puff pastry dough into a very thin sheet about the size of a sheet pan. Blitz puff paste or rerolled trimmings may be used.
- Place on a sheet pan and let rest 30 minutes, preferably in the refrigerator.
- Dock with a fork to prevent blistering.
- Bake at 400°F(200°C) until brown and crisp.
- Trim the edges of the
