Kaiserschmarrn is a deliciously simple Austrian pudding of fried crêpes, often served with a fruit compote. This variation includes the crêpes, a fruity plum marmalade and smooth custard all in one dish.

Method

To make the crêpes, sieve the flour into a bowl with the sugar and a small pinch of salt. Make a well in the centre, add the egg and vanilla and begin to whisk in the flour. As it starts to thicken, add the milk gradually until all the flour is incorporated and the batter is smooth and lump-free. Cover and refrigerate for 30 minutes.
