This pudding is a great way to use ripe pears when in season, with a perfect combination of warm cinnamon-pear filling and a crunchy flapjack topping.


Pear Filling

  • 60 g (2 oz) unsalted butter

  1. To make the pear filling, place the butter, demerara sugar, orange and lemon rind and the cinnamon in a pan and heat gently for about 5 minutes, stirring to dissolve the sugar. Increase the heat to medium and cook for another 5 minutes, or until the mixture bubbles and looks golden. Add the pear and cook gently for about 8-10 minutes, or until the pieces are just tender
