Ingredients: 240 g (7½ oz) self-raising flour; 180 g (5¾ oz) soft light brown sugar; 2 tablespoons coffee essence or 1 tablespoon instant coffee mixed with 2 tablespoons boiling water; 1 teaspoon bicarbonate of soda; 115 g (3¾ oz) unsalted butter, at room temperature; 150 g (5 oz) demerara sugar; 150 ml (5 fl oz) thick (double) cream; 60 g (2 oz) unsalted butter; 4 eggs, beaten; 1 vanilla pod, split lengthways; grated rind of ½ lemon; 200 g (6½ oz) dates, pitted and chopped; 45 g (1½ oz) raisins
