Hot, light and full of flavour, this pudding will brighten the gloom of a winter’s day like a burst of summer sunshine. Serve with the orange sauce or custard.

Ingredients

  • 100 g ( oz) thin-cut marmalade
  • 2 large oranges, peel and pith removed

Method

  1. Prepare a 1.25 litre pudding basin for steaming (see Chef’s techniques).
