  • 2 pounds fresh calf’s kidneys, trimmed and halved
  • 1 quart (4 cups) water</

Method

  1. In a pot, bring to a boil water included in A. Wash kidneys twice, drain and add. Boil over high heat for 5 minutes. Drain and cut kidneys into ½-inch cubes. Sprinkle with juice of fresh lime.
  2. In a caldero or heavy kettle, brown rapidly salt pork and ham. Reduce heat to low and sauté ingredients included in C, for 10 minute
