  • 4-pound dressed-weight whole chicken, cut into serving pieces or 4 pounds large chicken pieces

Method

  1. Wash chicken pieces and place in a caldero or heavy kettle, together with ingredients included in B.
  2. Bring to a boil over high heat. Reduce heat to moderate, cover, and boil for 1 hour.
  3. Uncover, and boil about 30 minutes, or until chicken is done and sauce thickens to taste.
